This budget-friendly gourmet mayo is courtesy of the chefs at Dr. Augusta's Sanitorium in Kensington Market, as reported in the Toronto Star.
- 1 cup (250ml) good quality mayonnaise
- 3 Tbsp (45ml) finely diced shallot
- 1 Tbsp (15ml) truffle oil
- 1 tsp (5ml) sherry vinegar
Combine all of the ingredients together in a small bowl. Keep covered in the fridge for up to two weeks.
Spread truffle mayonnaise on gourmet sandwiches with chicken, grilled fish fillet, thinly sliced roast beef, fried egg, or grilled vegetables. Use it as a dipping sauce for fish & chips or sweet potato fries. Mix it into deviled eggs or new potato salad.
