Sybil’s Curry Roasted Potatoes

Locally made Sybil’s curry pastes are a pantry staple in our household. High quality ingredients, complex flavours, and no fillers make these pastes versatile in many types of dishes.

Sybil's Curries - Version 3

Makes 3 - 4 Servings

  • 1 lb (454gr) small new potatoes or yams
  • 1 - 2 Tbsp Sybil’s Green Curry Paste, to taste
  • 1 Tbsp lemon juice
  • 1 Tbsp sesame seeds
  • salt & pepper, to taste

Preheat your barbecue or oven to 375°F/190°C.

Wash the potatoes and pat dry. Prick them all over several times with a fork. Rub with curry paste and set aside to marinate for 30 mins.

Grill over indirect heat or on the middle rack in the oven until fork tender. The cooking time will vary depending on the size of the potatoes.

Remove from heat and place in a bowl. Toss with lemon juice and sesame seeds.

These are a terrific accompaniment to roasted or grilled meats and fish. You can also try it with Sybil’s Butter Chicken or even Vindaloo if you like it hot!
