Quickie Chickie Marinade

Jerked Chicken

Serves 6

  • 3 lbs (1.4kg) chicken breasts, thighs, or drumsticks
  • ¾ cup Garlic Expressions Vinaigrette or any zesty Italian salad dressing
  • 2 Tbsp Bone Suckin’ Mustard or any sweet and tangy mustard
  • 1 Tbsp Bone Suckin’ Rib Rub or your favourite barbecue seasoning 

Mix dressing, mustard, and barbecue rub together in a large dish or resealable bag.  Add chicken pieces and toss well to coat with marinade.  Marinate in fridge 2 hours to overnight.  Remove chicken pieces from marinade and grill until done.

If you wish to reserve the marinade, bring it to a boil in a saucepan over medium-high heat and reduce until thickened.  Use as a basting sauce for the chicken, glaze for grilled vegetables, or drizzle over rice.
