Pomegranate molasses is a traditional Middle-Eastern ingredient, and can be found in Middle-Eastern or Kosher grocery stores. Many of us don't have access to such specialized markets so here is a simple method for making the syrup and molasses for yourself. It is an intensely sweet and tart ingredient that you may only use a small amount of in a single recipe, so keep the remainder in the fridge for future use.
- 4 cups all natural pomegranate juice, preferably unsweetened or naturally sweetened
- ½ cup granulated sugar
- ¼ cup fresh squeezed lemon juice
In a sauce pot over medium-low heat, combine the ingredients and stir until the sugar is dissolved. Reduce the liquid until it is the consistency of syrup, approximately 45 to 50 mins, and you will have pomegranate syrup. Continue to reduce to about 1 cup in quantity and you will have pomegranate molasses.
Allow to cool completely. Transfer to a glass container and keep the syrup or molasses in the refrigerator for up to 6 months.
