Moroccan Meatloaf with Spiced Potato Mash

This variation on classic meatloaf and mashed potatoes includes Morrocan seasonings for a tasty twist.

 Meatloaf

  • 1 Tbsp olive oil (we prefer virgin olive oil to sauté)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 Tbsp + 1 tsp, divided, harissa paste or The Epicientre Harissa powder mixed with 1 tsp olive oil
  • 1 tsp The Epicentre Roasted Cumin
  • ¼ tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • ½ cup couscous or bread crumbs
  • 1 can (8oz/227gr) tomato sauce
  • 1 egg
  • 1 lb (454gr) lean ground beef

Potato Mash

  • 2 lbs (900gr) Yukon Gold potatoes, peeled and diced
  • ¼ cup (½ stick) butter
  • 1 small onion, chopped
  • 1 tsp The Epicentre Roasted Cumin
  • ¾ tsp salt
  • ½ tsp fresh ground pepper

Preheat oven to 350°F/180°C.

Heat oil in a skillet over medium heat. Sauté onion until it begins to soften. Add garlic and continue to cook for 2 mins. longer. Stir in 1 Tbsp harissa along with cumin, cinnamon, and nutmeg; remove pan from the heat. Transfer the mixture to a large bowl and allow to cool for a few minutes. 

Stir the remaining tsp harissa in with the tomato sauce until well incorporated. 

Add couscous or bread crumbs to the onion mixture and stir to combine. Add ground beef, egg, and half of the tomato sauce to the bowl. Combine the mixture very well with your hands. Press the mixture into an 8 x 4 inch (1.5 L) loaf pan. Spread remaining tomato sauce over top. Bake until the loaf registers 160°F/70°C on an instant-read thermometer, about 45-60 mins. Remove from oven and let rest for 5 - 10 mins.

Meanwhile, bring a large pot of water to a boil. Add a pinch of salt. Cook the potatoes in the boiling water until tender, about 15 mins. Reserve a cup of the cooking water and then drain the potatoes. Transfer to a large bowl.

While the potatoes are boiling, melt the butter in a saucepan over medium heat. Add onions, cumin, salt and pepper, and cook until the onions begin to brown slightly. Add the mixture to the potatoes and mash. Add some of the cooking water, if needed, to achieve the desired mashed potato consistency.

Remove meatloaf from the pan and slice. Serve alongside, or on top of, the spiced potato mash. 

Try serving this with your favourite roasted vegetables that you cook for part of the oven time alongside the meatloaf.
