- 1-2 lbs Brussels sprouts
- olive oil
- salt & pepper
- ⅓ – ½ lb pancetta or bacon, diced
- 3-4 Tbsp House of Q Slow Smoke Gold BBQ Sauce
- 4 Tbsp Champagne vinegar
- white sugar, to taste, if required
Trim the stems off sprouts, rinse & drain. Drizzle with olive oil and season with salt & pepper. Place on a medium hot grill (350°F). Sear sprouts on all sides, turning often, until evenly browned. A grill basket is handy. Remove from the heat. Alternately, roast the sprouts in a preheated oven at 350°F for 30-40 mins.
In a skillet, sauté the diced pancetta or bacon until starting to crisp and render some fat. Reduce the to low and stir the Slow Smoke Gold into the pan. Stir in the Champagne vinegar. If the sauce is too acidic for your taste, add a pinch of sugar. Add the sprouts to the pan and toss to coat evenly. Serve warm.
