Bacon Wrapped Dates (or "Hot Date with a Pig")

Bacon Wrapped Dates

Makes 12 bites. They are great paired with a nut brown ale.

  • 12 large dried Medjool dates 
  • 6 oz  (170gr) Fontina cheese (you could substitute Gruyere, Emmental, or Oka)
  • 6 slices smoked bacon, cut in half lengthwise
  • 4 pickled jalapeños, sliced in thirds lengthwise

Preheat oven to 350°F/176°C. Place the bacon on a papered sheet pan and bake 12 minutes or until cooked but limp.  

Insert a chopstick into the bottom of each date and carefully push out the pit. Set aside.

Cut the cheese into ¼ inch slices, 1 inch long. Stuff a piece of cheese and a strip of jalapeño into the centre of each date. Wrap each date with a slice of cooked bacon and secure with a toothpick. Line a baking sheet with parchment paper and place the dates on it, bacon seam down. Bake for approximately 10 minutes or until the cheese starts to melt.
