Iguana Gold - Hot-Sauce-of-the-Month / November 2009

Go for the gold with this sauce from Half Moon Bay Trading Company.  This island pepper sauce comes from Costa Rica and packs a tasty Caribbean punch traditionally found in Barbados and the West Indies.  Cayenne and habanero peppers are combines with a veggie base of carrots, onions, and cucumbers.  Add to that some salt, sugar, garlic, vinegar and cumin for a perfect balance of sweet, salty, tanginess.  It has a healthy medium-hot kick perfect for zipping up hearty soups.  It’s also good with rice and beans, marinades, and cheesy queso dips.

Jalapeño, carrot, onion and garlic give this hot sauce fresh taste and mild to medium kick.  Vinegar adds tang and a touch of sugar brings out the natural sweetness of the peppers and veggies.  It has nice pepper mash consistency and goes well with lots of foods.  Use it in salsa, wraps and tacos, on eggs and pizza, with fish, rice, and bean salads.

You’ll definitely be on fire with Iguana En Fuego from Half Moon Bay Trading Company.  This sauce from Costa Rica is definitely on fire with a blend of habanero, onion and carrot for savoury heat, pineapple, papaya and passion fruit for sweet, and a dash of pepper extract to kick up the flames.  The flavour is great and the heat is greater!  Chileheads will be dashing this one on everything from chili to fries.  More moderate folks can use a few drops to zip up their own plate.
