Dave’s Temporary Insanity - Hot-Sauce-of-the-Month / September 2010
The name says it all. If you want to kick it up but not go over the top, then this is a good sauce for you. As with many of the sauces from Dave’s Gourmet, we suggest using it as an ingredient rather than a table sauce... unless insanity isn’t such a temporary state for you. Dash it into chili, soup, stew, salsa or wing sauce.
Dave's Ultimate Insanity
Red habaneros and red chiles spiked with pepper extract take this "sauce" over the top. Onion, garlic, tomato paste, and cane vinegar are just along for the ride. They help mask the bitterness of the extract, which can add a chemical tasting note in hot sauces. This sauce is best used as an ingredient only. A dash will heat up a batch of wing sauce in seconds flat.
